Spinach Apple Cake

A very bright colored cake (naturally green) using disguised spinach as a leafy green secret for a more healthy dessert. Surpirse guests when you serve this – they will not taste the spinach. DIRECTIONS 1. Preheat oven to 350°F. 2. For cake: place spinach in microwave-safe bowl; microwave 60-90 seconds to soften; place in colander and rinse with cold water; drain well, then lightly chop. 3. Add spinach to blender with the eggs, oil, vanilla, lemon juice, appleasuace and sugar. Blend until smooth. 4. Pour into a mixing bowl and add apples. 5. Sift together the flour, baking powder and salt. Combine with the spinach and apple mixture. 6. Pour into 2 greased and floured 9-inch round cake pans. 7. Bake 20-25 minutes. Allow to cool 8. For icing: mix together the confectioners’ sugar and applesauce; add softened butter and mix until spreadable. 9. Add walnuts between layers and on the top.
