Spinach Apple Cake

A very bright colored cake (naturally green) using disguised spinach as a leafy green secret for a more healthy dessert. Surpirse guests when you serve this – they will not taste the spinach. A fun sweet treat that takes a vegetable from savoury to sweet. Try it and enjoy!

INGREDIENTS

  • 3 cups fresh baby spinach
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • 1/2 cup unsweetened applesauce
  • 3/4 cup sugar
  • 2 medium apples, peeled and diced small
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts

Icing

  • 2 cups confectioners’ sugar
  • 2 tablespoons butter, softened
  • 2 tablespoons unsweetened applesauce

DIRECTIONS

1. Preheat oven to 350°F.

2. For cake: place spinach in microwave-safe bowl; microwave 60-90 seconds to soften; place in colander and rinse with cold water; drain well, then lightly chop.

3. Add spinach to blender with the eggs, oil, vanilla, lemon juice, appleasuace and sugar. Blend until smooth.

4. Pour into a mixing bowl and add apples.

5. Sift together the flour, baking powder and salt. Combine with the spinach and apple mixture.

6. Pour into 2 greased and floured 9-inch round cake pans.

7. Bake 20-25 minutes. Allow to cool

8. For icing: mix together the confectioners’ sugar and applesauce; add softened butter and mix until spreadable.

9. Add walnuts between layers and on the top.
