Recipe: Air Fryer Peach Hand Pies

Makes 12 servings

  • 1 pound peaches, diced and drained (fresh or frozen)
  • 1/2 cup sugar
  • 1/4 cup flour
  • 1/8 teaspoon salt
  • ½ teaspoon cinnamon
  • 1 egg white
  • 1 package refrigerated pie crust or 1 homemade pie crust for double-crust pie
  • Demerara or turbinado sugar, for sprinkling

Directions:

  • In a large bowl, cover the diced peaches with the sugar and let them rest for about 30 minutes to develop the juices. Add in the flour, cinnamon and salt and mix until blended. Set aside.
  • Lightly dust your work surface and rolling pin with flour. Roll out each pie crust to about a 12-inch circle, rotating, flipping and dusting with flour as needed to prevent sticking. Using a 4-inch biscuit cutter (or a 4-inch bowl and paring knife) cut out 12 (4-inch) circles. (You may need to gather and re-roll scraps.)
  • Drop 1 tablespoon peach pie filling into center of each circle. Fold in half and pinch edges completely. Fold pinched edges over and press with the tines of a fork to seal. Poke hand pie with fork once to prevent bursting.
  • Beat egg white in small bowl until frothy. Brush over the top of each hand pie, then sprinkle with demerara or turbinado sugar. Place on a parchment- lined baking sheet. (Hand pies can be frozen at this point for baking later.)
  • Set the air fryer to 350*F and preheat for about 5 minutes.
  • Working in batches, add pies to the basket so there is at least 1 inch of space between them and air fry for about 12 minutes, or until golden brown. Transfer to a plate, carefully wipe out the basket if there are any spills, and repeat with the remaining hand pies. Serve warm or at room temperature
